BRAISED PORK in SATAY SAUCE ©





Satay or sate, is a dish of marinated, skewered and grilled meat, served with a spicy peanut sauce dip, or peanut gravy, and slivers of onions and cucumbers, and ketupat (rice cakes). Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats or tofu. These are grilled or barbecued over a wood or charcoal fire, then served with various spicy seasonings. 

Satay is originated in Java, Indonesia. Satay is also popular in many other South-east Asian countries, such as Malaysia, Singapore, Brunei, Thailand, and southern Philippines.

In this preparation, instead of preparing satay in the authentic style by grilling the meat over charcoal fire, and  then served with spicy peanut gravy, we are going to do a stir-fried dish - fresh sliced pork stir-fry in spicy peanut butter and shrimp paste.


Ingredients and Preparation for 4

Prepare slices of onion, garlic, ginger, chilli, and diced sweet potatoes.
Prepare 1 lb pork slices.














Cooking Steps

Begin, by saute onions, ginger, garlic chilli in 4 tbs cooking oil in a large skillet in medium heat until fragrant.
Add pork slices and stir fry.
Add 4 tbs crunchy peanut butter, 3 tbs shrimp paste (commercially prepared available in jar), 1/2 tsp pepper, 2 tbs sugar, 1 tbs chicken stock brand, 1 tbs sesame oil. Blend seasonings into ingredients and continue to stir-fry.
