Curry Grouper Fish Head with egg plant and ladies finger is a signature fish dish in Malaysia, and is a home-style recipe.
Ingredients and Preparation
Prepare:-
- Grouper Fish Head - 1 lb
Prepare:-
- garlic - 5 cloves - sliced
- onion - 1/2 small size - sliced
- chili - 5 pcs - sliced
- lemon grass - 1 stalk - cut into short pieces
- ginger - 1/2 small size - sliced
- tomato - 2 small pieces
- ladies finger - 1 cup
- egg plant - 1 medium size - sliced into small pieces
Prepare:-
- curry powder (Baba's brand is a good recommendation)
- chili powder
Prepare:-
- coconut milk - mix 150 g coconut milk powder with 1 cup water and stir until you get a creamy texture.
Cooking Steps
Add 5 tbs curry powder, and 2 tbs chili powder.
Continue stirring and frying.
Add coconut milk, and stir.
When curry stew is boiling, add fish.
Stir gently.
For flavor, add:-
- 3 tbs chicken stock granules
- 3 tbs fish sauce
Add tomato, ladies finger, and egg plant.
Cover with top, and leave to simmer for 10 minutes over low heat.
Ready for serving.
