GREEN CURRY PORK with EGG PLANT n VEGETABLES ©





Green curry originated from Thai cuisine, and the name itself is derived from the color of the dish. Green curry has incorporated into Malaysian local cuisines. Green curry can be as hot as red curry. Green curry regardless of heat, have a definite and desired sweetness that is not usually associated with red curries. 

The ingredients for making green curry paste are green chillies, shallots, garlic, galangal, kaffir lime peel, roasted coriander, cumin seeds, white peppercorns, shrimp paste and salt.

Green Curry dish can be made with various kinds of meat and vegetables condiments. The popular ones are made with beef, pork, chicken, and fish ball, or straw mushrooms, fresh mushrooms, bamboo shoots, and/or cucumber. Green Curry is delicious when taken with fragrant white steam rice. 

In this preparation, the main ingredients used are pork meat, Thai egg plant and cabbage. The common ingredient in Thai curry cooking is Thai egg plant, shaped round white or green, the size of golf balls. When cooked in curry sauce they become softer, and absorb the flavor of the sauce.

Ingredients and Preparation for 4

Prepare -
  • ginger - 1 medium size - slice, 
  • onions - 1 large size - slice, 
  • garlic - 5 cloves - slice, 
  • chili - 4 pcs, 
  • egg plants - 3 pcs- slice, 
  • carrots - 1 large size - diced , 
  • cabbages - 1 cup - slice, 
  • tomato - 2 small size - halved, 
  • potatoes - 3 small size - remove skin and halved.

Prepare -
  • 1 lb pork slices.









Prepare coconut milk mixture.
  • Add 2 cups water to 160 g coconut milk powder, and stir continuously until smooth.








Using commercial prepared Green Curry Paste.














Cooking Steps

Begin, by saute ginger, onions, garlic, chilli in 5 tbs cooking oil in a large skillet in medium heat until fragrant.








Add 100 g green curry paste (readily available commercial made green curry paste) to the sauteed ingredients, and stir-fry briefly.
Add pork meat. Stir-fry and combine well with green curry paste.
For Flavor, add:-
  • Add 1 cup coconut milk mixture and stir.
  • Add 3 tbs palm sugar. 
  • (Note: Certain green curry paste brands contain salt seasonings. If necessary, add 2 tbs chicken stock brand, 1 tbs fish sauce).





Add potatoes and carrots, and combine well.

Cover with top, and leave to simmer for 5 minutes over medium heat.
Add cabbage, egg plant, tomatoes.

Combine well and continue stirring.

Add 1 cup coconut milk mixture.

Cover with top, and simmer for 5 minutes over low heat.

(Note: Consistency of curry sauce varies with the amount of coconut milk used).
Green Curry Pork with Egg Plant and vegetables are ready and flavorsome.
Ready for serving.
