SATAY SAMBAL CHICKEN with SWEET POTATO ©





Satay or sate, is a dish of marinated, skewered and grilled meat, served with a spicy peanut sauce dip, or peanut gravy, and slivers of onions and cucumbers, and ketupat (rice cakes). Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats or tofu. These are grilled or barbecued over a wood or charcoal fire, then served with various spicy seasonings. 


Satay is originated in Java, Indonesia. Satay is also popular in many other South-east Asian countries, such as Malaysia, Singapore, Brunei, Thailand, and southern Philippines.

In this preparation, instead of preparing satay in the authentic style by grilling the meat over charcoal fire, and  then served with spicy peanut gravy, we are going to do a stir-fried dish - fresh sliced chicken and diced sweet potatoes stir-fry in spicy peanut butter and shrimp paste.

Ingredients and Preparation

Prepare 1 lb sliced chicken breast.
Prepare slices of onion, ginger, garlic, chilli and diced sweet potatoes.













Cooking Steps  


Begin, by saute onions, ginger, garlic and chilli in 4 tbs cooking oil in a large skillet in medium heat until fragrant.
Add chicken meat, and stir-fry.
Add 4 tbs crunchy peanut butter, 3 tbs shrimp paste (commercially available in jar), 1 tbs chicken brand stock, 1/2 tsp pepper, 2 tbs sugar, 1 tbs sesame oil. Stir seasonings into chicken meat and continue stir-fry.
Add diced sweet potatoes and combine well. Cover with top, and braised for 10 minutes over low heat.
